hibachi at home--Hosting a hibachi-style dinner

1. Equipment:

  • Hibachi Grill: A small, portable hibachi grill (charcoal or gas) or an electric griddle if cooking indoors.

  • Utensils: Metal spatulas, tongs, chopsticks, and a squirt bottle for oil.

  • Table Setup: Set up a table or counter where guests can watch you cook. If you're indoors, you can use a large countertop or a dedicated dining space.

2. Ingredients:

  • Proteins:

    • Steak (New York strip or filet mignon)

    • Chicken (boneless, skinless breast)

    • Shrimp or Scallops

    • Tofu (for a vegetarian option)

  • Vegetables:

    • Zucchini, onions, mushrooms, and bell peppers.

    • Optional: Carrots, broccoli, or asparagus.

  • Rice or Noodles:

    • Fried rice with eggs, peas, carrots, and onions.

    • Yakisoba noodles or udon noodles.

  • Sauces:

    • Soy sauce

    • Garlic butter (mix butter, minced garlic, and a dash of soy sauce)

    • Ginger sauce (soy sauce, grated ginger, rice vinegar)

    • Yum Yum sauce (mayonnaise, ketchup, garlic powder, paprika, sugar, and vinegar)

3. Preparation:

  • Marinate the meat: Marinate steak and chicken with a simple mix of soy sauce, garlic, and sesame oil, or keep it simple with salt and pepper.

  • Chop vegetables: Slice zucchini into rounds, chop bell peppers into strips, and slice mushrooms and onions.

  • Pre-cook rice: If making fried rice, cook it a few hours before or use day-old rice.

4. Cooking Process:

  • Preheat the grill: For charcoal grills, light the charcoal and wait until they become white-hot. For gas or electric grills, preheat for about 10 minutes.

  • Cook the vegetables: Start with the vegetables as they take a bit longer to cook. Sear zucchini, onions, and mushrooms until they are tender, and season with soy sauce and sesame oil.

  • Cook the proteins: Sear the steak, chicken, or shrimp on the grill, turning them occasionally. For medium steak, cook it for about 3-4 minutes on each side. Shrimp should be pink and firm.

  • Fried rice: On the same grill or griddle, scramble eggs, then stir-fry the rice with peas, carrots, onions, and soy sauce. Add garlic butter for flavor.

  • Noodles (optional): Toss yakisoba or udon noodles with soy sauce, garlic butter, and vegetables.

5. Serve & Entertain:

  • Present the meal as it's cooked in stages—start with vegetables, followed by the proteins and rice.

  • Have fun by mimicking hibachi restaurant tricks like tossing food or creating a "volcano" using onion rings and oil.

  • Offer dipping sauces on the side for guests to enjoy with their meal.

6. Optional Side Dishes:

  • Miso soup or a simple salad with ginger dressing can make nice appetizers.

  • Serve sake or Japanese beer to complete the experience.
